Growing good grapes
With a natural farming philosophy we are adopting both biodynamic and organic practices. This is so that we can work at eliminating chemicals in our vineyards. Here Steve is mixing some of the 500 bd preparation in the flow form and applying it into the vineyard. We believe that by adopting these philosophies we are creating a stronger environment for soil life and harnessing the energy of the environment.
Keeping our hands on it
By growing good grapes we want to ensure we treat them well throughout the entire winemaking process. By careful hand picking we have the opportunity to hand select the best possible grapes and treat them delicately.
Making our Riesling
Once the hand picked Riesling is transported to the winery, we follow a strictly reductive winemaking process to ensure that we maintain freshness throughout the process. With minimal oxygen pickup and delicate extraction, we are ensuring the best quality. The Free run fraction of the Riesling which is the primary flow of juice from the press is the fraction of juice used for our wine. This is the freshest and most delicate.
Making our Shiraz
Our hand picked Shiraz is cold soaked in individual small batch fermenters for at least one week. By fermenting naturally we are allowing the natural characteristics of the fruit to show the terroir of the soil. After careful extraction on skins the parcels are basket pressed using traditional methods. The wine is then stored in French Oak barrels for approx 20 months.
