2007 Churinga Vineyard Shiraz Placeholder

KT and The Falcon is a small wine company sourcing grapes from an elevated patch of dirt in the township of Watervale. This celebrated vineyard was first planted in 1930 and represents the true spirit of the region. With gentle care from grapegrower to winemaker, working with both organic and biodynamic principles, it is our intention to produce wines with drinkability and personality. This wine has been produced using traditional techniques of open fermentation and basket pressing. Hand picked fruit was carefully selected and fermented naturally on skins in picking bins. Gentle hand plunging of the ferment and minimal working has produced a Shiraz with sweet fruit concentration and supple velvet tannins. Basket pressed and gravity fed directly to barrel, the wine was matured in 25% new French oak and 3 year old French oak barriques to ensure that the fruit is the defining feature.
